So I've done an exhaustive search online as to whether using the third brake would be MOT compliant and the definitive answer appears to be maybe. Think it probably depends om the mood of the tester.
However I think the lack of a third brake light would increase the risk of being rear ended by yummy mummy in her Hummer picking the kiddies up from school. If you do go down this route I'd suggest a two way switch in the boot so it can be a third brake light for 364 days of the year and rear fog on MOT day.
I'm assuming the use of the O/S reversing light isn't an option as the units are sealed and it's not possible to swap out for a red LED bulb. If that's the case then some have gone down this route and painted the area on the outside of the lens with Tamiya translucent red spray paint or better still a patch of red translucent vinyl film.

Like the suggestion of the switch, it's only for the MOT as you say. I could fit an MX5 Mk1 fog light but I don't want to cut the bumper, and it's offset which would annoy me.
It's a sealed unit (but it may be possible as there are a fewbscrews) but I don't fancy taking it apart. I don't think there are bulbs by the look of the LED patterns, probably LED boards. I'll think on some red film, that may work.

I've always thought the slightly offset NA UK market fog light looks worse than a bolt on one under the bumper. The requirements are for the light to be centre mounted or offset to the o/s. Nothing to stop you fitting one slap bang in the middle. If there is a way to mount a bracket just below the bumper these eBay ones look rather sleek.
These things go around in my head which is why I've just come up with plan D.
The eBay light would need two holes drilling for the mounting bolt and the cable. Remove the Eunos badge and mount the light there. Then reposition the Eunos badge directly above the Roadster badge.
The result would be almost perfect symmetry on the two sides of the car. If you ever wanted to go back to original set up the holes would be hidden behind the Eunos badge.
